Leftover Ham Anyone?

So I made a huge ham for Easter weekend and I just don’t know what to do with it all! Travis loves ham but I really am not a fan of all things pork related so there is still a lot leftover. I would make some split pea soup with it but I feel like it’s spring and soup and spring don’t go in my opinion, soup is for cold days not warm sunny ones.

Anyone have any leftover ham suggestions for me? Recipes that take it but don’t overpower the whole dish maybe?

    Well, my vote would be for pea soup whether it is spring or not. YUM. I do have a recipe that calls for ham in it. It’s a hashbrown casserole. You can change it up anyway you like. Tom loves this casserole, but my kids don’t. They won’t eat anything that has sour cream in it. Anyway, here you go:
    4 1/2 cups frozen hashbrown potatoes, thawed
    500 g cheddar cheese
    1 can condensed cream of chicken soup, undiluted
    2 cups sour cream
    1 cup peas
    1 cup cubed cooked ham
    1/4 cup butter/margarine
    3 tbsp onion
    2 cups cornflakes
    *combine potatoes, cheese, soup, onion and sourcream
    *add peas and ham
    *spread into 9×12 greased pan
    *combine cornflakes, crushed with melted butter/marg.
    *bake uncovered 50-60 min., 350F

    mmm that sounds so good Brenda, I’ve made something similar before without the ham and love it so I’ll have to try that recipe.

    Ham and cheese scones sound good too.

    And yes it’s snowing.. maybe I will put some pea soup in the slow cooker…

    The hashbrown casserole with ham is freaking amazing, though I’ve never had it with peas…. so are omlettes or quiche….you can also make a kind of hame baked casserole, just like with tuna…. and you can slice it up for egg, cheese & ham breakfast biscuit sandwiches :)
